2 New York Strip steaks 1 teaspoon stemmed and minced Rosemary 1 teaspoon stemmed and minced Thyme 1/4 cup chunk Blue Cheese (fresh) 2 table spoon butter 2 minced cloves garlic 1. preheat oven to 375, place a cooling rack with tinfoil under it in a cookie sheet and place in oven. 2. combine Rosemary, Thyme, Blue Cheese, 1 tablespoon butter, and garlic in a bowl and mix to a paste. 3. cut a pocket in the steaks and stuff each with half of the stuffing paste and salt/pepper on both sides 4. heat your sear pan over med/high heat melt 1 tablespoon butter in your sear pan until the "foam" goes away then place steaks in the pan until seared on one side then flip and repeat on other side. Once both steaks are seared (not cooked fully) on both sides. Place steaks on cooling rack in oven. Use about 3 table spoons of cooking sherry to deglaze your sear pan and then pour "sauce" over steaks. Cook steaks half way then flip. When steaks are aprox 145o turn on broiler and cook steaks until almost done then remove from oven and let them rest until fully cooked through (aprox 160o for med well). Serve with side dish.

I had Sloppy Joes tonight, "Sloppy" being the operative word here. I planned to eat them in front of the tv while I watched a rerun of "The Waltons," and I tripped over my own shoes, and spilled them all over my livingroom rug. YUCK!!!

Food. Perfectly seasoned with hhhhhhherbs. Delicately garnished with garnishes. Supported by sides. It were well scrummy.
